Chai Sugar Cookies

Ingredients

  • ½ cup unsalted butter room temperature
  • ½ cup granulated sugar
  • ¼ cup light brown sugar
  • 1 egg room temperature
  • 2 tsp vanilla extract
  • 1 ½ cup all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon
  • ½ tsp ginger
  • ¼ tsp cardamon
  • ¼ tsp allspice
  • ¼ tsp nutmeg
  • tsp cloves

Cinnamon Frosting

  • ½ cup unsalted butter room temperature
  • 2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp whole milk or milk of choice
  • ½ tsp cinnamon

Instructions

  • Mix Wet Ingredients. Add room-temperature butter, granulated sugar, and brown sugar to a medium or large mixing bowl. Blend with an electric hand mixer until fluffy and pale. Then, mix in room-temperature egg and vanilla extract.

  • Mix in Dry Ingredients. Add all-purpose flour, baking soda, homemade chai spice blend, and salt to the same bowl. Mix until a dough forms.

  • Add cookie dough to Baking Sheet. Using a large cookie scoop, scoop out the spiced cookie dough balls and place them on a cookie sheet or parchment-lined baking sheet. Repeat with the remaining cookie dough, leaving about 2 inches in between on the baking sheet, as these cookies will spread when baking. Sprinkle some cane sugar on top for extra flavor.
  • Bake Cookies. Once the oven is preheated to 350 °F, bake cookies for about 15 minutes or until golden brown on the sides. Remove from oven and gently transfer cookies to a wire rack to cool completely (about 10 minutes) before adding frosting.
  • Make Frosting. Add room-temperature butter, powdered sugar, vanilla, cinnamon, and milk to a small bowl and blend with a whisk until fluffy.
    Add 1-2 tablespoons of frosting to the cooled cookies, and enjoy!
