Mix Wet Ingredients. Add room-temperature butter, granulated sugar, and brown sugar to a medium or large mixing bowl. Blend with an electric hand mixer until fluffy and pale. Then, mix in room-temperature egg and vanilla extract.

Mix in Dry Ingredients. Add all-purpose flour, baking soda, homemade chai spice blend, and salt to the same bowl. Mix until a dough forms.

Add cookie dough to Baking Sheet. Using a large cookie scoop, scoop out the spiced cookie dough balls and place them on a cookie sheet or parchment-lined baking sheet. Repeat with the remaining cookie dough, leaving about 2 inches in between on the baking sheet, as these cookies will spread when baking. Sprinkle some cane sugar on top for extra flavor.
Bake Cookies. Once the oven is preheated to 350 °F, bake cookies for about 15 minutes or until golden brown on the sides. Remove from oven and gently transfer cookies to a wire rack to cool completely (about 10 minutes) before adding frosting.
Make Frosting. Add room-temperature butter, powdered sugar, vanilla, cinnamon, and milk to a small bowl and blend with a whisk until fluffy.
