a plate of chai sugar cookies.

These Chai Sugar Cookies are easy to make, soft, fluffy, subtly-spiced, and delicious. The best part of these cookies is the warm chai spices and the cinnamon frosting. These are the perfect cookies to make for holiday parties, birthdays, special occasions, and any time, and we think you all will love them!

What spices are chai made of?

The typical ingredients n a chai tea bag are cinnamon, cardamom, ginger, allspice, cloves, and nutmeg. So in our cookie recipe, we use all these warm spices to get that ultimate chai flavor.

🍪 Ingredients

These delicious cookies are irresistibly fluffy and soft. Here are the ingredients for these soft cookies with chai flavor and delicious frosting.

  • Room Temperature Butter. You can use unsalted butter or salted butter. The only thing we recommend if using salted butter is to reduce the salt by 1/4 tsp.
  • Granulated Sugar. You can use white sugar or cane sugar for these cookies.
  • Light Brown Sugar. We love using light brown sugar for the mild molasses flavor, and they make these slightly chewy in texture. However, we don’t want to overpower the chai flavor.
  • Room Temperature Egg. To keep these cookies soft, we are using 1 egg.
  • Vanilla Extract. To add a rounded flavor to these cookies, I recommend a splash of vanilla extract.
  • All-Purpose Flour. We have only tested regular unbleached all-purpose flour for these cookies.
  • Baking Soda. We only need a little leavening for these cookies, so we only use baking soda.
  • Salt. If using salted butter, you will want to reduce salt by 1/4 tsp. Salt brings out all the flavors in these cookies.
  • Spices. The blend of spices you will need to make a homemade chai spice mix: cinnamon, cardamom, ginger, allspice, cloves, and nutmeg.
  • Powdered Sugar. We use powdered sugar to make the frosting or icing.
  • Milk of Choice. We used whole milk, but any non-dairy milk would work. For a fun, festive spin, substitute with eggnog.

🥣 Instructions

These spiced cookies are easy to make, and the essential tools you need to make them are cookie sheets, parchment paper, a small bowl, an electric mixer, a hand mixer or a whisk, and a large (3-inch) and small (2-inch) cookie scoops.

  • Mix Wet Ingredients. Add room-temperature butter, granulated sugar, and brown sugar to a medium bowl or large mixing bowl. Blend with an electric hand mixer until fluffy and pale. Then, mix in room-temperature egg and vanilla extract.
  • Mix in Dry Ingredients. Add all-purpose flour, baking soda, homemade chai spice blend, and salt to the same bowl. Mix until a dough forms.
  • Add Cookie Dough to Baking Sheet. Using a large cookie scoop, scoop out the spiced cookie dough balls and place them on a cookie sheet or parchment-lined baking sheet. Repeat with the remaining cookie dough, leaving about 2 inches in between on the baking sheet, as these cookies will spread when baking. Sprinkle some cane sugar on top for extra flavor.
  • Bake Cookies. Once the oven is preheated to 350 °F, bake cookies for about 15 minutes or until golden brown on the sides. Remove from oven and gently transfer cookies to a wire rack to cool completely (about 10 minutes) before adding frosting.
  • Make Frosting. Add room-temperature butter, powdered sugar, vanilla, cinnamon, and milk to a small bowl and blend with a whisk until fluffy. Add 1-2 tablespoons of frosting to the cooled cookies, and enjoy!
