Pico De Gallo with Avocado

This Avocado Pico De Gallo is easy to make, fresh, and delicious! Serve as a dip with chips, or add as a topping to tacos.

Ingredients

  • ½ cup roma tomatoes , diced small
  • ¼ cup red onion or white onion , diced small
  • 1-2 garlic , minced (1 tsp)
  • 1 jalapeño , diced small, and seeds removed (optional)
  • cup cilantro , coarsely chopped
  • 2 avocados , diced or smashed
  • 1-3 tbsp lime juice , plus more to taste
  • pinch of salt , plus more to taste
  • pinch of black pepper , plus more to taste

Instructions

  • Prepare the veggies.
    Dice the onion, jalapeno, and fresh tomatoes into small pieces. Mince the garlic and coarsely chop the cilantro.
  • Prepare the avocado.
    In a medium bowl, add avocado and season with lime juice. Use a fork to smash up the avocado.
    If you prefer chunky salsa, cut the avocado into pieces instead of smashing it with a fork.
  • Make the avocado dip.
    Add the veggies and cilantro to the same bowl with the smashed avocado and season with salt and pepper.
    Taste and see if you need more salt, pepper, or lime juice.

Notes

Best when fresh.
Store leftover guacamole in a container and press it firmly with the back of a spoon. Add about 1/2 inch of water on top, secure the lid, and store it in the fridge for up to 3 days. When ready to use, carefully drain the water and stir the dip before serving.
Tips:
  • Use Ripe Avocados. 
  • Use fresh lime juice rather than lime juice in a bottle. 
  • Season to taste. After following our recipe, we recommend tasting a small amount in a bowl by adding a pinch of salt. The same goes for the lime juice. You may prefer a little more salt or lime juice.
