Sweet Potato Pizza Bites

These Sweet Potato Pizza Bites are so dang good and make the perfect appetizer or snack! They take about 30 minutes to make and requires a few ingredients!

Ingredients

  • 1-2 sweet potatoes small-medium, about 1 lb. look for a narrow/long sweet potato (yam), cut into 1/3 inch thick coins.
  • 1 tbsp of olive oil
  • pinch of salt and black pepper
  • ¼ cup marinara sauce homemade or store-bought
  • ½ cup mozzarella cheese cubed/shredded
  • 1 tbsp fresh basil leaves finely chopped
  • pinch red chili flakes

Instructions

  • Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
  • Cut sweet potatoes into 1/3-inch thick coins and drizzle the olive oil on top. Add a pinch of salt and black pepper, and use your fingers to coat the sweet potatoes with the oil and spices thoroughly.
  • Bake the sweet potatoes for about 15 minutes, or until golden brown. Be careful not to over bake them as you don't want them too soft.
  • Remove the sweet potatoes from the oven and add a spoonful of marinara sauce in the center. Sprinkle the mozzarella cheese evenly on top. Return to the oven and bake for 5 additional minutes, or until the cheese is melted. 
  • Remove from the oven and sprinkle the finely chopped basil leaves on top. Let the pizzas cool for about 2-5 minutes before serving.
