Sweet Potato Pizza Bites
These Sweet Potato Pizza Bites are so dang good and make the perfect appetizer or snack! They take about 30 minutes to make and requires a few ingredients!

- 1-2 sweet potatoes small-medium, about 1 lb. look for a narrow/long sweet potato (yam), cut into 1/3 inch thick coins.
- 1 tbsp of olive oil
- pinch of salt and black pepper
- ¼ cup marinara sauce homemade or store-bought
- ½ cup mozzarella cheese cubed/shredded
- 1 tbsp fresh basil leaves finely chopped
- pinch red chili flakes
Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
Cut sweet potatoes into 1/3-inch thick coins and drizzle the olive oil on top. Add a pinch of salt and black pepper, and use your fingers to coat the sweet potatoes with the oil and spices thoroughly.
Bake the sweet potatoes for about 15 minutes, or until golden brown. Be careful not to over bake them as you don't want them too soft.
Remove the sweet potatoes from the oven and add a spoonful of marinara sauce in the center. Sprinkle the mozzarella cheese evenly on top. Return to the oven and bake for 5 additional minutes, or until the cheese is melted.
Remove from the oven and sprinkle the finely chopped basil leaves on top. Let the pizzas cool for about 2-5 minutes before serving.
