Roasted Butternut Squash, Chicken, and Caramelized Onion Pizza

This homemade Roasted Butternut Squash, Chicken, and Caramelized Onion Pizza is easy to make, packed with tons of flavor and protein, and is super tasty! Pair your pizza with a bottle of Cabernet Sauvignon as the fruit and tannins complement the flavors perfectly.

  • Pizza dough homemade or storebought
  • 2 tablespoons of olive oil
  • 2 garlic cloves minced
  • 1 teaspoon fresh thyme leaves
  • pinch of salt and pepper
  • ½ cup fresh gruyere cheese
  • ½ cup fresh sharp cheddar cheese
  • ¼ cup roasted butternut squash
  • ¼ cup shredded chicken
  • ¼ cup caramelized onions
  • a drizzle of honey optional


  • Place a pizza stone in the oven and preheat the oven to 550 degrees F or as high as it can get. You want your oven as hot as possible. 
  • Prepare pizza dough.  If your dough was in the fridge, bring the dough to room temperature about 30 minutes before rolling it out. If your dough is ready, flour the surface and flour a rolling pin to roll the dough from the center to the edges until the circle is about half an inch thick.  Once fully rolled out, place parchment paper on your pizza peel, gently pick up the dough, and lay it on top. 
  • In a small bowl, mix the minced garlic, thyme, olive oil, salt, and pepper.
  • Using a silicone pastry brush, gently add the olive oil mixture on top of the pizza dough.
  • Assemble the pizza by adding the butternut squash, shredded chicken, caramelized onions, and sprinkle the gruyere and sharp cheddar cheese evenly on top. 
  • Gently slide pizza onto the pizza stone and bake for about 10 minutes or until cheese is melted and crust is golden brown. 
  • Remove pizza from the oven and drizzle honey on top, if desired.
  • Cut into slices and serve immediately. 


How to make Roasted Butternut Squash:
  • Preheat oven to 450 degrees F. Peel and butternut squash into cubes. Toss with 3 tablespoons olive oil, a pinch of salt and pepper, and 1 teaspoon sweet paprika. Bake for 45 minutes, flipping halfway through.
How to make Caramelized Onions:
  • Cut 2 onions and saute over medium-high heat with 2 tablespoons of salted butter. Stirring consistently for up to 30 minutes until onions are caramelized.
