Mexican Chicken Marinade:
- 1 lb boneless skinless chicken tenderloins
- 2 tsp chili powder
- 2 tsp cumin powder
- 1 tsp smoked paprika
- 1 tsp sweet paprika
- 1 tsp onion powder
- ½ tsp garlic powder
- ¼ tsp oregano
- 1 tsp chipotle chili powder
- ¼ tsp coriander powder
- ½ tsp red chili flakes
- 1 tsp salt
- ¼ tsp black pepper
- 2 tbsp apple cider vinegar
- 2 tbsp avocado oil
Chicken Tacos:
- Tortillas
- Avocado
- Mexican Cheese
- Salsa
- Sour Cream
- Cilantro
- Hot Sauce
In a small bowl, add all seasoning together and toss to combine. To a medium bowl with the chicken, add the seasoning, apple cider vinegar, and avocado oil. Rub together to coat the chicken in the marinade. Add plastic wrap on top and marinate for 30 minutes.
Add the marinated chicken to a saute pan over low-medium heat. Cover and cook for about 5-7 minutes until the chicken starts to brown. Flip the chicken over and saute for about an additional 5-7 minutes, or until the chicken is thoroughly cooked.
Remove the chicken from the pan and shred with two forks or cut into small pieces with a fork and knife. Put the chicken back in the pan to soak up any remaining spice and juice.
Use chicken for tacos, burritos, Mexican pizza, or taco salads.
