- 10-15 medium-large sweet peppers
- ¾ cup marinara either homemade or store-bought
- ½ cup polenta tube diced into cubes
- ½ cup mozzarella shredded or diced into small cubes
- 3-5 Basil leaves coarsely chopped
- 1 tbsp olive oil
Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
Using a utility knife, cut a triangle on one side of the sweet pepper, and place it aside.
Scrape out the seeds with your finger or with a small spoon. Rinse the sweet peppers to get rid of any lingering seeds.
Chop the cut-out sweet pepper triangles into small pieces.
To the sweet pepper, add the marinara sauce, the sweet pepper pieces, diced polenta cubes, and shredded mozzarella.
Drizzle with olive oil and bake in the oven for 25 minutes.
Remove them from the oven to cool for a couple of minutes. Add chopped basil and serve immediately.
