Ingredients

  • 1 flax egg *
  • 2 tbsp coconut oil melted
  • ½ cup pumpkin puree
  • 1 ¼ cup whole wheat flour plus more for rolling and shaping dough
  • 1 tsp cinnamon

Peanut Butter Icing

  • ¼ cup peanut butter
  • 2 teaspoons coconut oil

Instructions

  • Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  • Prepare flax egg in a bowl by adding 1 tbsp ground flaxseed with 2 tbsp of water. Let the mixture sit for a few minutes or until it becomes sticky (consistency of an egg white).
  • Add melted coconut oil and pumpkin puree to the bowl and mix to combine.
  • Add flour and cinnamon on top of the mixture, tossed together first, then mix until a dough is formed.
  • Sprinkle about 1 tsp of flour on a smooth surface and roll out the dough to 1 cm thick. Use a biscuit cutter to make shapes (or use a top of a glass). Carefully transfer cut dough to the baking sheet, and bake for 15 minutes.
  • Make Peanut Butter Icing while the treats are baking.  Whisk together 2 teaspoons of coconut oil with 1/4 cup of peanut butter.  Microwave for 10 seconds and whisk again until the icing becomes soft and smooth.
  • Remove the treats from the oven and let them cool completely.
  • Once the treats are cooled, drizzle the icing on top and place them in the freezer for 5-10 minutes, or until the icing hardens. Treat your pups with one of these treats!!

Notes

Store in a cookie jar or a glass container at room temperature for 1 week.
