Adobo Chicken Tacos Lettuce Wraps

- 2-3 tbsp olive oil
- ½ white onion , diced
- 2 garlic cloves , minced
- 1 lb ground chicken or ground turkey or pork
- 2 tsp cumin powder
- 1 tbsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- 1 tsp salt , plus more to taste
- ½ tsp pepper
- ¼ cup chipotle pepper in adobo sauce
- 1-2 tbsp lime juice
Saute onion and garlic.Add diced onion to a pre-heated saute pan with 1-2 tbsp olive oil over medium-high heat. Add a pinch of salt and cook the onion for about 3-5 minutes. Add garlic and cook for 1 additional minute. Cook chicken with spices and adobo.Add ground chicken to the same saute pan. Use a spatula to break the ground chicken into pieces. Or, use a potato masher to help break the cooked chicken into pieces if needed.Once the chicken is cooked, add adobo pepper and taco seasoning, and stir to combine. Cook until tender, and season to taste.Once the ground chicken is fully cooked and broken into pieces, taste and determine if you need more salt or add 1-2 tbsp lime juice. Make taco lettuce wraps.Add ground Mexican chicken meat to lettuce cups and season with pico de gallo, Mexican crema, hot sauce, or other taco toppings, and enjoy!
If you don’t have pico de gallo, dice 2-3 small tomatoes into small pieces and season with lime juice, salt, and pepper.
Use 2-3 tbsp of premade taco seasoning or follow our suggestion on the spices to season the ground chicken.
Store leftover ground chicken in the fridge for up to 3 days in an airtight container.
