Ingredients

  • 1 ¾ cup heavy whipping cream
  • 5 oz bittersweet chocolate 70-72% cacao
  • 2 tbsp powdered sugar

Instructions

  • Whip the Cream. Using a hand mixer, whip 1 cup of the cream on medium-high speed in a medium bowl over an ice bath until soft peaks form.
  • Melt Chocolate. Chop the chocolate and transfer to a saucepan with the remaining 3/4 cup of cream. Melt the chocolate over medium heat, frequently stirring with a spatula.
  • Gently Fold Everything Together. Add the melted chocolate to the bowl with the whipped cream and gently fold everything together with a rubber spatula until there are no more white streaks.
  • Add to Mini Cups. Transfer the chocolate mixture to 4-6 mini cups, cover with plastic wrap or a lid and refrigerate to set for at least 4 hours.
  • Decorate & Enjoy. Once the chocolate mousse has set, add whipped cream on top with chocolate shaving or cocoa powder and fresh berries before serving.
