two cups of Strawberry Margaritas served with a fresh strawberry.

These Strawberry Margaritas on the Rocks are fruity, refreshing, slightly spicy, and tasty! Instead of going the frozen strawberry margarita route, we used ripe strawberries to make a strawberry simple syrup! What we love about these margaritas is the flavor! We love the mixture of lime, spicy, strawberries, and tequila. It’s definitely refreshing and tasty, and y’all are going to love it!

🍓 Ingredients

  • Tequila Liqueur – we like to use a Anejo Tequila because it has nice bold flavor and vanilla notes to it, which pair nicely with the strawberry simple syrup. Sometimes we skip the Cointreau and just add more tequila. When we don’t have Anejo, we either use Reposado because it has a nice salty and rich flavor that goes well with sweet simple syrup. If you are not a fan of Cointreau Liqueur, sub it out for more Tequila!
  • Cointreau Liqueur – Has a crisp, smooth orange flavor which pairs nicely with the strawberry flavor
  • Fresh Lime Juice
  • Strawberry Simple Syrup – It’s just Water, Sugar, and Strawberries.
  • To serve: Fresh Strawberries, Ice, Lime Wedges, Salt for rimming the glass

Instead of adding just salt to the rim of the glass, add some Chile Margarita Seasoning from Spiceology to give this drink an extra punch of citrusy, sweet & spicy. It’s completely optional, but good.

If you want to have more of a spicy kick to your margarita, add jalapeño when making the simple syrup. This is the key to not making the drink too spicy, but if you prefer a nice spicy bite, add some jalapeño slices to the shaker!

Instructions

  • Make the Strawberry Simple Syrup. To a medium pot, add the water, sugar, sliced strawberries, and the Chile Margarita Seasoning or jalapeño slices (or omit if avoiding spice). Over medium heat, stir until the sugar dissolves, and the strawberries break down and release their juice. Remove from the heat to cool for 5 minutes, and transfer to a blender to purée. Transfer mixture to a glass jar and place in the refrigerator until ready to use.
  • Shake. To an ice-filled cocktail shaker, add the Tequila, Cointreau, lime juice, and the strawberry simple syrup using a jigger. Shake until chilled.
  • Rim the Glass. By using a lime wedge, moisten the rim of a glass, and flip the glass upside down and dip it in salt.
  • Pour & Enjoy! Add ice to the glass and carefully pour the drink over the ice. Garnish with a fresh strawberry before serving.
