Everyone loves a warm, crispy loaf of bread enjoyed with roasted garlic olive oil, so that’s what is used here for the sauce! Spread a generous amount of the sauce and top the pizza with veggies and chickpeas and roast it to perfection. When the pizza is ready to be served, drizzle some fresh Herbed Green Goddess Dressing on-top! For those traditional pizza nights, try making this pizza instead, or make it when you have guests! Simple Veggie Pizza + Herbed Green Goddess Dressing

This simple veggie pizza is topped with zucchini, yellow squash, chickpeas, and a delicious herbed green goddess dressing! It's vegan, easy to make, and super flavorful! 
Easy Veggie Pizza

Yields 8 slices
Ingredients
  • Veggie Pizza:Pizza dough homemade or store-bought
  • 1 yellow squash cut into thin strips
  • 1 zucchini cut into thin strips
  • ½ cup of cherry tomatoes halved
  • 1, 15 oz can chickpeas drained and rinsed
  • 1 garlic clove minced
  • 2 pinches of pepper and salt
  • 3 tablespoons of olive oil
  • 2 teaspoons of sweet paprika
  • Herbed Green Goddess Dressing:1/4 cup of curly parsley
  • ¼ cup of chives
  • 2 tablespoons of tahini
  • ¼ cup of dill
  • ¼ cup of basil
  • 1 garlic clove
  • 1 tablespoon pure maple syrup
  • Juice of 1 lemon about 2 tablespoons
  • 1 teaspoon of lemon zest
  • pinch of salt and pepper to taste
  • 4 tablespoons of filtered water
Instructions
  • Preheat the oven to its highest temperature (500-550 degrees F) and place the pizza stone in the middle of the oven, or use a baking sheet, lined with parchment paper.
  • In a small bowl, add the sweet paprika, 1 tablespoon of olive oil, and a pinch of salt and pepper to the chickpeas and toss to combine, and set aside.
  • In a small bowl, mix the remaining olive oil with the minced garlic, and another pinch of salt, and pepper, and set aside.
  • Roll dough onto a floured surface and brush the garlic and olive oil mixture on top.
  • Peel the zucchini and yellow squash to cut into thin strips and add on top of the pizza.
  • Add the seasoned chickpeas and cherry tomatoes.
  • Transfer to the pizza stone and bake for 15 minutes or until the bottom is crispy and golden brown.
  • While the pizza cooks, make the herbed green goddess dressing.
  • Remove from the oven and drizzle the herbed green goddess dressing on top. Serve immediately and Enjoy.
  • Herbed Green Goddess Dressing:Add all ingredients (except water) to a food processor and blend until creamy. Add 1 tablespoon of water at a time until desired consistency. Taste and add more salt or pepper to your liking.
