This Raspberry Champagne Cocktail is fruity, slightly sweet, bubbly, and very delicious! It’s the perfect Champagne cocktail to make for the holidays or a celebration. Instead of serving Champagne by itself, we create a sweet raspberry simple syrup to create this seriously festive drink, and y’all are going to love it!
A champagne cocktail is a classic alcoholic drink typically made with sugar, Angostura bitters, Champagne, Cognac, or brandy and garnished with a maraschino cherry or citrus twist.
In our recipe, we skip the bitters and both Cognac and Brandy. Instead, we focus on the bubbly from the Champagne poured over a sweet raspberry simple syrup.
🍊 Ingredients
Besides a bottle of Prosecco, you will need a few simple ingredients to make a delicious raspberry simple syrup that will make a tasty drink!
Honey. Adding honey adds a nice sweetness also some warmth to the tartness of the raspberries. Don’t skip it!
Raspberries. You could use fresh or frozen raspberries since we are breaking them down to release their sweet and tart fruit flavor.
Orange Juice. This adds a nice balance with the honey and raspberry.
A bottle of Prosecco. Use a good bottle you like. We used Cupcake Prosecco to make these cocktails, which was the perfect duo.
To garnish your cocktails, add an orange peel or a Dehydrated Orange. Completely optional but highly recommended! It adds some extra flavor, plus it’s a sweet treat after you finish your drink!
🍾 Instructions
These festive cocktails are easy to make. The longest part is allowing the simple syrup to cool before using. If you are in a rush, add simple syrup to the freezer to speed up the cooling.
Make the Raspberry Simple Syrup. In a small saucepan, simmer orange juice with the raspberries and honey until the raspberries start to fall apart and release their juice. Strain the mixture and discard the pulp and raspberry seeds. Cool for 1 hour before using.
Pop The Champagne. Add 2 oz of the Raspberry Simple Syrup to a champagne flute or glass, and fill the rest with bubbly.
Garnish & Enjoy! Add a garnish like a Dried Orange Slice for extra flavor, and enjoy!
