Roasted Butternut Squash, Chicken, and Caramelized Onion Pizza

Welcome back to another Pizza Friday! This week we have this delicious Roasted Butternut Squash, Chicken, and Caramelized Onion Pizza! This is the perfect pizza for the autumn and winter days.  It’s packed with tons of flavor, protein, savory, and cozy. 

As soon as the pizza comes out of the oven, slice, eat and enjoy! The last bite of this pizza is delicious and will leave you wanting more. It’s that good! 

Butternut Squash Pizza and chicken

To make this pizza, you will need the following ingredients:

  • pizza dough – homemade or store-bought
  • olive oil
  • salt and pepper
  • roasted butternut squash
  • shredded chicken
  • caramelized onions
  • Gruyere cheese
  • sharp cheddar cheese
  • fresh thyme
  • honey

For the sauce, we used our garlicky olive oil sauce but added thyme for extra flavor!   Here is what you need:

  • Olive oil
  • Garlic 
  • Fresh Thyme
  • Salt and Pepper

If you have left-over roasted butternut squash, and/or caramelized onions, add it to this pizza. If you are making both items from scratch, you will need the following ingredients: 

  • butternut squash
  • olive oil
  • salt and pepper
  • sweet paprika
  • sweet onions
  • salted butter

Instructions are below on how to make each one from scratch, but if you have left-overs from another meal, this is a great way to use them and make something delicious.

Wine Pairings Ideas:

We selected a Cabernet Sauvignon to pair with this pizza.  The fruit and tannins complement the different flavors of this pizza perfectly. Every sip after each bite enhances the flavor more and more, making it a perfect match.

The wine we selected is from Laurentia Winery, located within the Grand River Valley Wine Region in Ohio.  Any Cabernet Sauvignon or even a Pinot Noir would pair nicely with this pizza.

Yields 8 slices

Ingredients

  • Pizza dough homemade or storebought
  • 2 tablespoons of olive oil
  • 2 garlic cloves minced
  • 1 teaspoon fresh thyme leaves
  • pinch of salt and pepper
  • ½ cup fresh gruyere cheese
  • ½ cup fresh sharp cheddar cheese
  • ¼ cup roasted butternut squash
  • ¼ cup shredded chicken
  • ¼ cup caramelized onions
  • a drizzle of honey optional

Instructions

  • Place a pizza stone in the oven and preheat the oven to 550 degrees F or as high as it can get. You want your oven as hot as possible. 
  • Prepare pizza dough.  If your dough was in the fridge, bring the dough to room temperature about 30 minutes before rolling it out. If your dough is ready, flour the surface and flour a rolling pin to roll the dough from the center to the edges until the circle is about half an inch thick.  Once fully rolled out, place parchment paper on your pizza peel, gently pick up the dough, and lay it on top. 
  • In a small bowl, mix the minced garlic, thyme, olive oil, salt, and pepper.
  • Using a silicone pastry brush, gently add the olive oil mixture on top of the pizza dough.
  • Assemble the pizza by adding the butternut squash, shredded chicken, caramelized onions, and sprinkle the gruyere and sharp cheddar cheese evenly on top. 
  • Gently slide pizza onto the pizza stone and bake for about 10 minutes or until cheese is melted and crust is golden brown. 
  • Remove pizza from the oven and drizzle honey on top, if desired.
  • Cut into slices and serve immediately. 

Notes

How to make Roasted Butternut Squash:
  • Preheat oven to 450 degrees F. Peel and butternut squash into cubes. Toss with 3 tablespoons olive oil, a pinch of salt and pepper, and 1 teaspoon sweet paprika. Bake for 45 minutes, flipping halfway through.
How to make Caramelized Onions:
  • Cut 2 onions and saute over medium-high heat with 2 tablespoons of salted butter. Stirring consistently for up to 30 minutes until onions are caramelized.
