Welcome back to another Pizza Friday! This Friday, we are making fennel and sausage pizza! This pizza is easy to make, packed with tons of flavor and protein, and is super tasty! Y’all are going to love it!
We are going with our favorite garlicky olive oil sauce for this pizza. It doesn’t mask the fennel flavors, plus it’s super simple too! Here is what you need:
Olive oil
Garlic cloves
Salt and Pepper
If you have left-over or flavored sausage, add it to this pizza. If you are making sausage from scratch, you will need the following ingredients:
1 lb ground pork
1/2 teaspoon fennel seeds
2 medium cloves, minced
1 small shallot, minced
2 teaspoons of olive oil
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon oregano
1 teaspoon sugar
1/2 teaspoon red pepper flakes
Mix all ingredients in a bowl and then sauté the mixture in a skillet using your wooden spoon, breaking the sausage into pieces/crumbles.
For the veggies, you will need:
fennel, thinly sliced or julienne
sliced sweet red pepper or sub red chili pepper for a more spicy pizza
Topped with fennel fronds

We selected a white blend of Pinot Gris and Gewurztraminer to pair with this fennel and sausage pizza.The gentle notes of floral and spices complement the flavors of the roasted fennel and seasoned sausage.
The wine we selected is from M Cellars Winery, located within the Grand River Valley Wine Region in Ohio.Any Pinot Gris or White Blend with a higher percentage of Pinot Gris grapes would pair nicely with this pizza.

Fennel & Sausage Pizza

This homemade fennel and sausage pizza is easy to make, packed with tons of flavor and protein, and is super tasty! Pair your pizza with a Pinot Gris wine as the gentle notes of floral and spices complement the roasted fennel and seasoned sausage perfectly.
½cupfresh mozzarella cheesecut into cubes (4 ounces)
½cupstore-bought flavored sausage or make your own
1fennel bulbjulienne or thinly sliced
3sweet red peppersthinly sliced, or sub red chili peppers for a more spicy pizza
fresh fennel fronds
Instructions
Place a pizza stone in the oven and preheat the oven to 550 degrees F or as high as it can get. You want your oven as hot as possible.
Prepare pizza dough. If your dough was in the fridge, bring the dough to room temperature about 30 minutes before rolling it out. If your dough is ready, flour the surface and flour a rolling pin to roll the dough from the center to the edges until the circle is about half an inch thick. Once fully rolled out, place parchment paper on your pizza peel, gently pick up the dough, and lay it on top.
In a small bowl, mix the minced garlic, olive oil, and salt and pepper.
Using a silicone pastry brush, gently add the garlicky olive oil mixture on top of the pizza dough.
Assemble the pizza by adding the red sweet peppers (or sub red chili peppers), fennel, sausage, and sprinkle the mozzarella cheese evenly on top.
Gently slide pizza onto the pizza stone and bake for about 12-15 minutes or until cheese is melted and crust is golden brown. If needed, turn on the broiler on high to make the cheese extra brown on top. Be careful not to burn the pizza, as this process goes quickly.
Remove pizza from the oven and add fresh fennel fronds on top.
Cut into slices and serve immediately.
