Welcome back to another Pizza Friday! This week we are sharing our Peach Pizza with Goat Cheese. It’s sweet and savory and each bite will make you crave more. What we love about this pizza is the flavor and how unique it is. It’s definitely a winner in our book and will be on repeat this summer with a nice glass of Chardonnay.
Peaches. We used yellow Georgia Peaches for this pizza. When using peaches on pizza, make sure they are ripe but not overly ripe, aka, not too soft to touch.
Pizza Dough. Homemade or store-bought. We used our 72-hour pizza dough for this recipe. We love how much flavor this pizza dough has and how many air pockets it has. Dreamy and delicious.
Olive Oil Sauce. This sauce is simple. It’s just olive oil with salt and pepper mixed together.If you want to get fancy, we recommend adding Lemon flavored olive oil. It’s a nice addition, and we love and use Brightland’s Lucid Olive Oil for this pizza.
Spinach. Adding spinach is optional. It doesn’t add much flavor, but we like to add it to this pizza extra nutrients.
Goat Cheese. We used Vermont Goat Cheese for this pizza. It’s our favorite Goat Cheese to get because it’s fresh and has a nice mild, sweet, and creamy flavor. We recommend adding about 1/2 cup cheese to balance the sweetness from the peaches and glaze.
Fresh Thyme Leaves. It adds nice floral notes to each bite and goes well with the peaches and goat cheese.
🍯 Honey Balsamic Glaze
We used white balsamic vinegar instead of traditional balsamic vinegar because it has a nice sweetness. We then added honey and a pinch of salt and made a delicious glaze. This glaze is perfect for this pizza, so we highly recommend it here.
If you don’t have white balsamic vinegar, we recommend drizzling some honey over the baked pizza.
🍕 Instructions
This pizza is simple to make. However, we recommend making a rectangular cut pizza instead of making a round pizza. We prefer to make this peach pizza because it looks more like flatbread and is easier to serve as an appetizer.
Preheat Oven. Preheat your oven to the highest temperature, and place a pizza stone on the middle rack of the oven. A higher temperature is crucial to making delicious homemade pizza. Once the oven is preheated, let it sit for 10 additional minutes to make sure the pizza stone is at the same temperature as your oven.
Prepare Pizza Dough. Roll pizza dough out with your hands or a rolling pin. Try to make the pizza dough as thin as possible; since the peaches cook fast, we don’t want an underbaked middle. Place pizza dough on parchment paper so it’s easier to slide on the pizza peel.
Make Honey Balsamic Glaze. Add White Balsamic Vinegar to a small saucepan and add honey and salt. Bring to a boil, reduce heat, and simmer until the sauce has reduced to half the original volume. Remove from heat and allow the sauce to cool. This will thicken the balsamic glaze.
Add Toppings. On the pizza, spread the olive oil sauce on top and generously add the sliced peaches. Next, sprinkle Goat Cheese and chopped spinach on top.
Bake Pizza. Slide pizza on the hot pizza stone and bake for 10 minutes until the pizza crust is golden brown.
Add Additional Topping & Enjoy. Add fresh thyme to the baked pizza and generously drizzle the honey balsamic glaze on top before enjoying it.
