Peach & Goat Cheese Pizza

Welcome back to another Pizza Friday! This week we are sharing our Peach Pizza with Goat Cheese. It’s sweet and savory and each bite will make you crave more. What we love about this pizza is the flavor and how unique it is. It’s definitely a winner in our book and will be on repeat this summer with a nice glass of Chardonnay. 🙂

Pizza Ingredients

  • Peaches – We used yellow Georgia Peaches for this pizza. They were ripe but not overly ripe. Aka, not too mushy to touch.
  • Pizza Dough – Homemade or store-bought. We used our overnight pizza dough recipe for this pizza, and it was delicious.
  • We added olive oil with salt and pepper on top of the pizza for extra flavor. If you want to get fancy, we recommend adding Lemon flavored olive oil. It’s a nice addition. We love and use Brightland’s Lucid Olive Oil for this pizza.
  • Spinach – this topping is optional. It doesn’t add any flavor, so why not add it for extra nutrients.
  • Goat Cheese – We recommend adding about 1/2 cup cheese to balance the sweetness out from the peaches and glaze.
  • Fresh Thyme Leaves – Adds nice floral notes with each bite and goes really well with peaches and goat cheese.

Honey Balsamic Glaze

We used white balsamic vinegar instead of traditional balsamic vinegar because it has a nice sweetness to it. We then added honey and a pinch of salt and made a delicious glaze. This glaze is perfect for this pizza, so we highly recommend it here.

If you don’t have white balsamic vinegar, we recommend drizzling some honey over the baked pizza.

How to make this pizza

This pizza is simple to make. Instead of making a round pizza, we recommend making a rectangular cut pizza. We prefer to make this peach pizza this way because it looks more like flatbread, and it’s easier to serve as an appetizer.

Step 1: Preheat oven and prep pizza dough.

Step 2: Make the honey balsamic glaze.

Step 3: Add olive oil and toppings evenly on top and bake for 10 minutes.

Step 4: Once crust is golden brown, remove from oven and add balsamic glaze on top. Cut and serve!

Peach and Goat Cheese Pizza

Ingredients

  • 16 oz pizza dough, homemade or store-bought
  • 2 tbsp olive oil
  • pinch of salt and pepper
  • 2 peaches, sliced
  • ½ cup goat cheese
  • 2-4 sprigs of fresh thyme leaves
  • ½ cup spinach, chopped

White Balsamic Glaze

  • ¼ cup white balsamic vinegar
  • ¼ cup honey
  • pinch of salt

Instructions

Honey Balsamic Glaze

  • Add all ingredients (white balsamic vinegar, honey, and a pinch of salt) to a sauce pan over medium heat. Bring to boil, reduce heat to simmer for about 5-7 minutes, or until the vinegar reduces in half.
    Remove the pan from the heat to cool for about 5 minutes, until the glaze becomes thick.

Peach Pizza

  • Preheat the oven to the highest temperature (500°F or 550°F) your oven can get.
  • Add olive oil and a pinch of salt and black pepper to a small bowl. Stir to combine.
  • Prep the pizza dough. Roll it out. Spread the Olive Oil sauce evenly on top. Add chopped spinach and sliced peaches op top, and generously sprinkle goat cheese evenly all over.
  • Bake at the highest temperature (500-550° F); your oven can get for about 10 minutes or until doneness.
  • Add fresh thyme leaves on top and generously drizzle the honey balsamic glaze on top before serving.
