For the last 3 years, I have been traveling to West Palm Beach, Flordia and visited several cafes and restaurants in the area. I was inspired to make this smoothie after visiting a cute restaurant. I had the opportunity to meet the owner, and we chatted for a while about why she opened her restaurant. It was inspiring; she simply wanted to offer healthy food for everyone to enjoy, whether they were vegan, omnivore, gluten-free, etc. I asked her if she would share the ingredients for her mint chocolate chip smoothie that I enjoyed so that I could create my own.
