This Chicken Mexican Pizza is made with Flour Tortillas and is quick and easy to make. This is a Taco Bell Mexican Pizza Copycat made with wholesome ingredients. Our version is layered with refried beans, shredded chicken, pickled jalapeños and then sandwiched between two flour tortillas. We then top it with hot sauce and shredded Mexican cheese and bake it to perfection. The results = delicious.
This pizza is similar to a taco or a loaded quesadilla, but better. Y’all are going to love this recipe!
Flour Tortillas. We love Costco’s Flour Tortillas, but you can use corn tortillas too. If you are using uncooked tortillas, we recommend that you cook them first, on the stovetop for a bit, as they won’t fully cook in the oven when they are layered with ingredients.
Refried Beans. You can use homemade or store-bought refried beans. We prefer using Refried Pinto Beans in this recipe, but Refried black beans work just as well.
Pickled Jalapeño Slices. This is optional, but we love the tangy flavor these pickled jalapeños give with each bite. We love Jeff’s Garden Sliced Tamed Jalapeño Peppers, but feel free to use any brand you have on hand.
Hot Sauce. We used Siete’s Traditional Hot Sauce (it’s our favorite), but feel free to use any hot sauce you have on hand!
Homemade Salsa or store-bought – We made a cherry tomato salsa for our Mexican Pizza — Recipe in notes!

Instructions
Step 1: If not using store-bought shredded chicken and refried beans, prepare these ingredients first.
Step 2: Preheat the oven to 450°F and line a baking sheet with parchment paper.
Step 3: If using uncooked tortillas, add them to a pan to cook each side. Once done, add 1 layer of the tortilla to the prepared baking sheet. Add about 1/4 cup of refried beans and spread it out evenly over the tortilla. Add shredded chicken and sliced jalapeños evenly on top, and add the second tortilla on top and press down.
Step 4: Add about 2-3 tbsp of hot sauce on top of the second tortilla and spread it evenly with the back of a spoon. Sprinkle a generous amount of Mexican Cheese on top.
Step 5: Bake for about 15 minutes, or until doneness.
Step 6: Remove from the oven and add desired toppings on top before serving.

How to store leftovers and reheat the next day?
Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a sauté pan over medium-low heat until hot.

We recommend pairing this pizza with a bottle of Merlot or Shiraz. These 2 wines drive a lingering and spicy finish with each bite. So good!

Notes
Cherry Tomato Salsa Ingredients: 10 cherry tomatoes, quartered; 1 tbsp minced red onion; 1 minced garlic clove; 1 tbsp minced cilantro, 1 tbsp lime juice, and a pinch of salt and pepper. If using uncooked tortillas – cook each side for 1 minute in a pan over medium heat.
