Welcome back to another Pizza Friday! This week, we are sharing our Taco Bell Copycat Mexican Pizza Recipe. Our homemade pizza is layered with refried beans, Mexican shredded chicken, pickled jalapeños sandwiched between two flour tortillas, then topped with hot sauce and shredded Mexican cheese and baked to perfection. Once baked, we added fresh salsa, green onions, cilantro, and sour cream on top. The results = delicious.
What we love about this recipe is how easy it is to make! It’s basically a loaded quesadilla but better. Y’all are going to love this Mexican Pizza!
Flour Tortillas – We used Costco’s Flour Tortillas, but any tortilla will work. We recommend that if you are using uncooked tortillas, cook them on the stovetop for a bit, as they won’t fully cook in the oven when they are stacked with the rest of the ingredients.
Refried Beans – either homemade or store-bought – We recommend using Refried Pinto Beans in this recipe.
Homemade Salsa or store-bought – We made a cherry tomato salsa for our Mexican Pizza — Recipe in notes!

How to make Mexican Pizza?
Step 1: If not using store-bought shredded chicken and refried beans, prepare these ingredients first.
Step 2: Preheat the oven to 450°F and line a baking sheet with parchment paper.
Step 3: If using uncooked tortillas, add them to a pan to cook each side. Once done, add 1 layer of the tortilla to the prepared baking sheet. Add about 1/4 cup of refried beans and spread it out evenly over the tortilla. Add shredded chicken and sliced jalapeños evenly on top, and add the second tortilla on top and press down.
Step 4: Add about 2-3 tbsp of hot sauce on top of the second tortilla and spread it evenly with the back of a spoon. Sprinkle a generous amount of Mexican Cheese on top.
Step 5: Bake for about 15 minutes, or until doneness.
Step 6: Remove from the oven and add desired toppings on top before serving.

How to store leftovers and reheat the next day?
Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a sauté pan over medium-low heat until hot.

We recommend pairing this pizza with a bottle of Merlot or Shiraz. These 2 wines drive a lingering and spicy finish with each bite. So good!

Cherry Tomato Salsa Ingredients: 10 cherry tomatoes, quartered; 1 tbsp minced red onion; 1 minced garlic clove; 1 tbsp minced cilantro, 1 tbsp lime juice, and a pinch of salt and pepper. If using uncooked tortillas – cook each side for 1 minute in a pan over medium heat.
