Everyday Colorful Salad with Homemade Balsamic Vinaigrette Ingredients:
Salad Ingredients: red leaf lettuce, carrot, cherry tomatoes, cucumber, red onion, yellow bell pepper.
Balsamic Vinaigrette Ingredients: balsamic vinaigrette, olive oil, honey, shallot, and salt and pepper.
This salad requires a total of 6 different veggies, but you can use any veggies you like! The ones I used, paired nicely with the homemade balsamic vinaigrette.
The balsamic vinaigrette is also easy to make, delicious, and fresh! Store leftovers in the fridge for up to 1 week. For extra flavor and nutrients, I chickpea croutons, hemp seeds, and avocado. Feel free to use any extra toppings that you have on hand.

Assemble Salad.Prep all ingredients for the salad (clean, chop, dice, etc.) and grab desired amounts of each to add to a bowl. Top with the homemade balsamic vinaigrette, and enjoy!
Make Balsamic Vinaigrette.Add all ingredients to a bowl and whisk together, or add to a vinaigrette shaker or mason jar and shake vigorously until mixed.
1/4 cup balsamic vinaigrette, 1/2 cup olive oil, 2 tbsp honey, 1 tbsp shallot, salt and pepper to taste
