Today’s post is my everyday salad recipe with a homemade balsamic vinaigrette! It’s out of this world delicious and colorful too!
This is my go-to salad for a quick and healthy lunch or as an easy side to dinner! The salad is easy to assemble, and the fresh vegetables can be prepped ahead of time, which is a win-win!
This fully loaded vegetable salad requires a total of 6 ingredients, and you can use any veggies you like! The ones I use pair lovely with the homemade balsamic vinaigrette dressing!
The dressing is also simple, fresh, and flavorful! It requires only 6 ingredients, and leftovers can be stored in the refrigerator throughout the week!
For added nutrients, protein and healthy fats, add any toppings you like! My go-to are chickpea croutons, hemp seeds, and avocado!
This salad is also perfect for when you’re on-the-go and can packs well for traveling by car or plane! I hope you all love this salad and the homemade balsamic vinaigrette!
