This Everyday Colorful Salad with Homemade Balsamic Vinaigrette is loaded with fresh veggies, simple to make, healthy, and super tasty! It’s my go-to salad for a quick and healthy lunch or dinner! It’s easy to assemble, and the fresh veggies can be prepped ahead of time, which is a win-win!
This salad requires a total of 6 different veggies, but you can use any veggies you like! The ones I used, paired nicely with the homemade balsamic vinaigrette.
The balsamic vinaigrette is also easy to make, delicious, and fresh! Store leftovers in the fridge for up to 1 week. For extra flavor and nutrients, I chickpea croutons, hemp seeds, and avocado. Feel free to use any extra toppings that you have on hand.
