This easy Strawberry Coulis recipe requires only 3 ingredients. It’s perfectly sweet and fruity and can be used for so many recipes! You can use frozen or fresh strawberries and you will always get the same results: a delicious strawberry sauce. This fancy sauce takes your desserts, dinners, and drinks to another level! Y’all are going to love this recipe!
Coulis (pronounced koo-LEE) is French for a thick sauce that is made from either pureed and strained vegetables or fruits. Coulis is typically used as a garnish for both entrees and desserts. In my recipe, you do not need a blender. Instead, you strain the cooked-down fruit over a bowl and let it cool. It will thicken up as it cools.
Ingredients
Fruit – Fresh or Frozen works in this recipe. The only difference I found is that the cooking time to break down the frozen fruit takes longer than fresh fruit.
Cane Sugar – This will help sweeten the fruit and reduce tartness.
Water, or Fresh Lemon or Orange Juice – This helps with simmering the fruit when cooking to release their sweet juices.
In this recipe, I used Strawberries to make Strawberry Coulis, but you could easily use any type of Fruit you have on hand, like raspberries, blueberries, cranberries, etc.
Recipe Variations
Add 5-8 Rose Petals to the strawberries. These two together make a nice floral and fruity pair.
Add a tiny amount (1/4 teaspoon) of Vanilla Extract to the strawberries. This compliments the strawberries very well without being overpowering in vanilla.
Add 1-2 tablespoons of Lemon Juice or Orange Juice to the strawberries. This adds a nice tangy fruit flavor to the strawberries.
How to make Strawberry Coulis
Simple – First you need to simmer down the strawberries (fresh or frozen) with cane sugar and water (or substitute fresh orange or lemon juice) until the fruit starts to break down releasing their sweet juices. You then strain the sweet sauce from the pulp, leaving you with this wonderful strawberry coulis to add to your recipes.
What to do with Fresh Strawberry Coulis
This Simple Strawberry Coulis can be used in lots of ways.
Drizzle it over cheesecake, yogurt, oatmeal, waffles, pancakes, or ice cream
It pairs well with lemon-flavored desserts, like lemon pound cake and lemon cakes
This Coulis will keep well in the refrigerator for 5-7 days. If you don’t use it up within a week, I recommend freezing it, so you have it on hand for last-minute desserts, drinks, or recipes!

Instructions
To a sauce pan, add cane sugar, fruit, and water (or substitute fresh orange or lemon juice) and bring it to a simmer over medium heat, mixing continuously with a spatula or wooden spoon for about 7-10 minutes
Once the fruit starts to break down releasing their sweet juices, turn off the heat and get a bowl ready with a strainer.
Strain the sweet sauce from the pulp over the bowl. Use the back of a wood spoon or spatula to press down on the cooked strawberries to help separate all the juice.
Cool the sauce before enjoying!
