Filled cookies, also known as cookie cups or stuffed cookies standard cookies but have a special filling, offering two treats in one! These cookies have a pocket or pouch, prepared similarly to dumplings, in which the dough is encased around a chocolate filling, and the edges are crimped. If you are a peanut butter lover, we recommend replacing the chocolate filling with creamy peanut butter! Maybe even add a Reese’s peanut butter cup in the center for the ultimate chocolate and creamy peanut butter surprise!

These chocolate-stuffed peanut butter cookies are irresistibly soft and chewy. Here are the ingredients you’ll need for these cookies with a chocolate filling:
Room Temperature Butter. You can use unsalted butter or salted butter. The only thing we recommend if using salted butter is to reduce the salt by 1/4 tsp.
Granulated Sugar. You can use white sugar or cane sugar for these cookies.
Light Brown Sugar. We love using light brown sugar for the mild molasses flavor, and they make these cookies chewy in texture. However, we don’t want to overpower the peanut butter flavor.
Room Temperature Egg. To keep these cookies chewy, we are using 1 egg.
Vanilla Extract. To add a rounded flavor to these cookies, I recommend a splash of vanilla extract.
All-Purpose Flour. We have only tested regular unbleached all-purpose flour for these cookies.
Baking Soda. We only need a little leavening for these cookies, so we only use baking soda.
Salt. If using salted butter, you will want to reduce salt by 1/4 tsp. Salt brings out all the flavors in these cookies.
Creamy Peanut Butter. We like using Wild Friend’s natural Peanut Butter because their peanut butter doesn’t have any added oils in its ingredients. You could use crunchy peanut butter to make these cookies have a chewy texture!
Chocolate Bar. We used Hu’s Chocolate Dark Chocolate bar to fill these cookies, but you can use chocolate chips too. If you use chocolate chips, you want to add enough morsels to the centers before you close the cookie dough. After the cookies bake, you want the center to have a puddle of chocolatey goodness.

These soft peanut butter cookies filled with chocolate are easy to make, and the essential tools you need to make them are cookie sheets, parchment paper, a small bowl, an electric mixer, a hand mixer or a whisk, and a large (3-inch) and small (2-inch) cookie scoops.
Mix Wet Ingredients. Add creamy peanut butter, room temperature butter, granulated sugar, and brown sugar to a medium or large mixing bowl. Blend with a mixer until fluffy and pale. Then, mix in room-temperature egg and vanilla extract.
Mix in Dry Ingredients. Add all-purpose flour, baking soda, and salt to the same bowl. Mix until a dough forms.
Assemble Cookies. Using a large cookie scoop, scoop out the peanut butter cookie dough balls and place a chocolate square in the center. Scoop another cookie dough ball and put it on top of the chocolate. Press the edges of the dough and shape the cookies. Place on a cookie sheet or baking sheet lined with parchment paper. Repeat with remaining cookie dough and chocolate squares, leaving about 2 inches in between on the baking sheet, as these cookies will spread when baking. Sprinkle some cane sugar on top for extra flavor.
Chill Cookie Dough. You will want to chill the cookies for 15-30 minutes before baking for the best results. This helps with overspreading when the cookies are baking.
Bake Cookies. Once the oven is preheated to 350 °F, bake cookies for about 20-22 minutes or until golden brown on the sides.
