These Peanut Butter Gluten Free Cookies are made with only 5 ingredients and make the perfect nutty, sweet treat to enjoy throughout the week. These cookies are paleo, soft, flourless and vegetarian. For extra oomph, we dipped these cookies in melted chocolate and sprinkle some flake sea salt on top!

We love these gf Peanut Butter Cookies for 2 reasons: they require minimal ingredients, and they are super easy to make and 100% delicious! Y’all are going to love them!

Ingredients to make these Flourless Peanut Butter Cookies:

  • Natural Peanut Butter – We used Wild Friends’ Peanut Butter. Their peanut butter is super creamy and only contains 2 ingredients: peanuts and salt.
  • Dark Brown Sugar, or substitute light brown sugar. We like to use dark brown sugar because it adds more flavor than light brown sugar, in our opinion.
  • Vanilla extract – for extra flavor.
  • Egg – helps bind everything together.
  • Salt – to balance it all out.

We dipped our peanut butter cookies in melted chocolate and add flaked sea salt on top, but this is completely optional. There is just something delicious about peanut butter and chocolate.

How to make these gf peanut butter cookies:

Step 1 – Mix all ingredients: peanut butter, brown sugar, vanilla extract, egg, and salt.

Step 2 – Scoop out the dough and place them on a baking sheet. Press the top of the dough to form a crosshatch pattern.

Step 3 – Bake at 350 degree F for 15 minutes.

Step 4 – Cool the cookies completely before enjoying, or dipped the cooled cookies in melted chocolate and top with flaked sea salt.

Store in an airtight container at room temperature for up to 5-days. These cookies can be stored in the freezer after they are baked for up to a month.

These Peanut Butter Cookies require 5 ingredients and make the perfect gf, nutty, sweet treat to enjoy throughout the week. Dunk the cookies in melted chocolate and sprinkle flaked sea salt on top for extra oomph.

Ingredients
  • 1 cup peanut butter we like Wild Friends’ Peanut Butter
  • ½ cup dark brown sugar packed
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 1 egg
  • 5 oz chocolate chips optional
  • pinch of flaked sea salt optional
Instructions
  • Preheat oven to 350 degrees F and line a baking sheet with parchment paper
  • Add the peanut butter, brown sugar, egg, vanilla extract, and salt to a medium-sized bowl. Stir all ingredients together with a spatula until a dough forms. 
  • Using a cookie scoop, scoop out dough and place dough on the prepared baking sheet, spacing them about 2 inches apart. Press down on top of the dough with a fork to flatten the dough and to form a crosshatch pattern. 
  • Bake cookies for about 15-18 minutes, or until brown. Remove them from the oven and let them cool for about 5 minutes. 
  • Optional step – Melt the chocolate chips in the microwave, stirring in increments, until melted. Dip one side of the cooled cookie into the melted chocolate and place back on the baking sheet. Once all cookies are dipped in chocolate, add flaked sea salt on top and transfer the sheet to the fridge for about 10, or until the chocolate has hardened.
