Today’s post is my everyday salad recipe with a homemade balsamic vinaigrette! It’s out of this world delicious and colorful too!

This is my go-to salad for a quick and healthy lunch or as an easy side to dinner! The salad is easy to assemble, and the fresh vegetables can be prepped ahead of time, which is a win-win!

This fully loaded vegetable salad requires a total of 6 ingredients, and you can use any veggies you like! The ones I use pair lovely with the homemade balsamic vinaigrette dressing!

The dressing is also simple, fresh, and flavorful! It requires only 6 ingredients, and leftovers can be stored in the refrigerator throughout the week!

For added nutrients, protein and healthy fats, add any toppings you like! My go-to are chickpea croutons, hemp seeds, and avocado!

This salad is also perfect for when you’re on-the-go and can packs well for traveling by car or plane! I hope you all love this salad and the homemade balsamic vinaigrette!

A healthy and delicious salad with fresh vegetables, and a homemade balsamic vinaigrette!

Ingredients

Salad Ingredients:

  • head red leaf lettuce
  • 1 carrot peeled and grated
  • 1/2 cup cherry tomatoes cut into halves
  • 1 cucumber sliced
  • 1/4 red onion chopped
  • 1 yellow pepper chopped

Homemade Balsamic Vinaigrette Ingredients:

  • 1/4 cup balsamic vinaigrette
  • 1/2 cup olive oil
  • 2 tbsp raw or vegan honey
  • 1 tbsp shallot minced
  • salt and pepper to taste

Optional Toppings:

  • 1/4 cup chickpea croutons
  • 2 tbsp hemp seeds
  • avocado

Instructions

Salad Assemble Instructions:

  1. Prep all ingredients for the salad (clean, chop, dice, etc.) and grab desired amounts of each to a bowl. Top with the homemade balsamic vinaigrette and any additional toppings and enjoy!

Homemade Balsamic Vinaigrette Instructions:

  1. All ingredients in a bowl and whisk together, or add to a vinaigrette shaker or mason jar and shake vigourously until mixed.
